When I go to Vietnam, I tend to eat a lot of Vietnamese food. So much that sometimes, my wife has to call a stop to it and force me to eat something that doesn’t involve a noodle, grain of rice or fish sauce. When this happens, I usually complain, pout, and kick about. Basically, I turn into a 3 year old.

It was one of these times again last week where she put her foot down and told me to find a non-Vietnamese place for us to try out. So I opened the excellent Word magazine and unenthusiastically started down the list of international restaurants until I saw a listing that piqued my interest.

Italian tradition meets Japanese ingenuity

It took a while to find the place, mainly due to the fact that it is down an alley. Best advice is to look for the Domino’s and then walk past it, then make a left when the road ends. We arrived on a very busy Saturday night and were told it was going to be a 30 minute wait for a table but were free to sit at the bar. I suggest anyone eating here to sit at the bar to watch the awesomeness happen.

All the pizza’s are made by the man in the red rimmed glasses. And he is very good at what he does.

The menu is quite extensive with appetizers, soups, salads, one-dish meals and of course pizza. With over 14 different pizzas, it was hard to choose. Luckily, Pizza 4P’s offers combination pizzas by offering half orders on each pie. This time, we ordered a full margherita and a half salmon sashimi/quattro flowers pies.

From the first minute of watching from the bar, I was completely enthralled by the quick work by Chef Yoshikawa and his crew making the pies. The speed at which pizzas were getting placed in the wood-fired oven was astounding after seeing some of the complex affairs that were being assembled. I asked the chef’s assistants to let me know when he was going to start our pizzas so I could document the process. So after a half hour of beers, conversation with our fellow bar mates and a fantastic caprese cocktail appetizer, the assistant indicated that ours was next.

Once the dough gets rolled out, the toppings get piled on. I love a place that doesn’t shred their mozzarella and seeing Chef Yoshikawa grabbing whole chunks of cheesy goodness made me extremely happy.

Once all the ingredients are on the pie, it gets moved to a waiting pizza peel for baking. .

Once Thuy, the pizza baker gets a hold of the pizza, it is placed inside the oven for about a minute, then it is slowly rotated and constantly checked for the prerequisite char marks to appear. When Thuy decides the pizza is done, it is placed on an awaiting dish to be garnished. It only took 2:27 from the time Thuy put the margharita pizza in the oven to the time the plate was placed in front of us.

A simple tomato sauce, fresh mozzarella and basil finished off with some extra-virgin olive oil is all that is on this margherita pizza. My wife commented that the tomato sauce was the best she had ever had on a pizza. Sometimes simple is all you need.

The other pie that came out was the complete opposite of simple but the crew still managed to get it out to us at 3:47. The Quattro Flowers pizza had pumpkin, leek, telosma cordata, sesbania, grandiflora and daylily flowers accompanied on a sweet mozzarella cheese mayo and parmesan cheese. The medley of flora in the Quattro Flowers brought a fresh, crisp texture to the pizza and would have made it a light meal if it wasn’t for the other side of my plate.

The other half was the Salmon Sashimi which had house-made ricotta, capers, onions and parmesan cheese cooked onto the pizza. It was finished off with some raw salmon and fresh dill on the side. The Salmon Sashimi side of the pizza was a playful Japanese spin on traditional italian ingredients by adding the raw salmon and dill.

As we were leaving, I had a chance to chat with the owner, Yosuke Masuko about his restaurant. Chef Yoshikawa and him have been friends for over 20 years and actually built a wood fired a few years ago in his garden. When I asked about the quality and care they took in each pie that came out, the former venture capitalist cum restauranteur simply replied, “I really like pizza”.

We came back 2 more times and tried the Okonomiyaki, Chicken Teriyaki, Quattro Fromaggio, Proscuitto and the Salmon Miso pizzas. All were great and we will definitely come back when we are back in Ho Chi Minh City!

There’s something about a wood fired pizza that gets me well, a bit fired up.  I think that it’s the crispy, yet chewy crust that only a stupidly hot wood oven can create. I also love the visual aspect of a pie with blistered, almost burned edges and taking that first bite, burning the roof of your mouth and not caring.

That’s why my wife and I ended up at  Dolce Italia: Pizza Napoletana Da Giorgio after a hearing from a friend about the pizzas. The menu is a mixture of antipastas, sandwiches, pastas and of course, wood fired pizzas. We ended up ordering a classic Pizza Fresca ($9.50) and the Ripieno Classico ($11.50).

Another great aspect of wood fired pizzas is that they take no time to cook so from the time we ordered to the time we got our pizza and calzone was under 10 minutes.

The Pizza Fresca is sheer simplicity; consisting of tomato sauce, fresh mozzarella cheese, fresh tomatoes and  basil. It’s this simplicity that allows the high quality ingredients to shine.  The crust was superb with just enough charring to give it that taste only a wood fire can give.

We also ordered the Ripieno Classico or Calzone Napoletano which consisted of ricotta, shredded mozzarella, salame Napoli and basil.

The crust for the calzone wasn’t as crisp as the pizza but still managed to have that great wood-fired taste and there was ample amounts of goodness inside that made it gut-bustingly delicious.

There are about 10 pizzas on the menu which range from $6 – $15 which is very reasonable considering the size of the pies. Also, they do not deliver and only do pick up orders.

Pizza Pizza

The great thing about Phnom Penh is that it has a plethora of restaurants that will deliver food to your residence in no time. One item that is ubiquitous to delivery is pizza. So we though it would be great to see what delivery options Phnom Penh’ers have for pizza. The Pocket Guide Cambodia has a great guide called Door 2 Door that has over 50 restaurants to choose from and we decided to use it as our resource for our Pizza delivery review.

We invited a dozen people over to a centrally located flat, ordered a bunch of pizzas and rated them to see how each pizza stacked up for delivery.

We tried to keep it as consistent as possible. The pizzas that we ordered were half Margarita and half Pepperoni (or it’s equivalent). We ordered a pizza at 7 different places in the city that were in a mile of the flat with an exception of one place and logged when we ordered the pizzas, how long the call took and when they arrived. Price, size and extras were also noted.

All the ratings were done in nyamies with 5 being the best and 1 being the worst (with the notable exception of one person that rated the pizzas from best to last- yeah you know who you are). Everyone involved had a great time and were very serious with their ratings and gave great comments which are interspersed in the ratings. The pizzas are going to be in order of time called.

One notable tidbit of the Pizza Company was the packets of ketchup, chili flakes and oregano that were given with the order. No other delivery place managed anything more than a packet of chili oil.

Kampot tales

The view at the Rusty Keyhole and I am not just talking about the ribs.

Kampot is my favorite long weekend destination when a bit of countryside life is needed. Considering its small size (40,000 population), this quirky little riverside town has a large amount of culinary options to choose from.

If I had to make one stop in Kampot for some food, it would have to be the Rusty Keyhole. I have been coming to the Rusty Keyhole for over 5 years now and what keeps me coming back isn’t only the Jurassic sized ribs order but the great hospitality by the owners Kristian and his wife Com. Kristian is a fountain of information if you are into dirt bike riding and with the addition of their 2 year old daughter Kanika, the Keyhole has a great family feel to the place. Over the past year, the Keyhole has moved to a location just outside Kampot town that gives you a slice of countryside life. For those who want to stay in town, Kristian is planning a new location in town and it should be open a couple of weeks from now Its open now!

Okay back to the ribs. They aren’t your typical ribs as Kristian keeps the loin with the order but manages to keeps the meat moist by a closely guarded par-boiling process. The ribs are then grilled to order, a choice of starch is added along with some fresh cut veggies on the side. Heaven on a plate. $6 for a small order, $8 for a large.

Another place that demands recognition is Mea Culpa. A guesthouse located just 5 minutes walk from the center of town, their wood-fired oven pizzas are the goods.

Probably the best pizza in Cambodia, the pizzas only take 3 minutes to cook in the 650 degree oven. You can see how much care Ben takes into his final product, inspecting every single plate coming out of the kitchen.I asked Ben, the owner of Mea Culpa, why his pizzas are so damn good and he answered simply “Its all about the crust”.

I ordered the Margherita pizza ($5.50 for a Medium) which had a generous amount of cheese that didn’t overpower sauce. I also had the feta cheese, tomato and basil dip ($3.00). The punchy tomato sauce was tempered by a generous portion of feta cheese. Homemade melba toast accompanies.

Some other noteworthy places in Kampot:

Blissful Guesthouse for their amazing duck egg omelettes.

Bamboo Light for Sri Lankan dishes.

Bar Red for their gargantuan late night samosas.

Epic Arts for their gooey chocolate brownie and other pastries.

Rikitikitavi for their 1st floor deck with stunning views of the river. Best place in town for a sunset drink.

Ta Ouv Restaurant for some fresh seafood.

Addresses: Kampot has no street names but it’s a small enough town to get around.

Just ask any tuk tuk driver. Even better, rent a bicycle and do some exploring.
